Sweet pastry or pâte sable is a shortcrust pastry enriched with egg yolks, resulting in a biscuit like very short pastry perfect for tart shells and biscuits. Made with the finest quality unsalted butter and real vanilla from Heilala.
Each packet of Carême Sweet Shortcrust contains one sheet of ready rolled pastry approx. 460mm x 270mm x 3mm.
USES
It’s ideal for making decadent summer fruit tarts or lemon tarts. Often it is baked blind and filled with a pastry cream or whipped cream before topping with fresh fruits. For something quick and easy, cut 10cm round biscuits and sandwich a filling of chocolate mouse, ice cream or lemon curd between two biscuits.

Tart cases for fresh fruit tarts or tarlets
Tart cases for filled baked tarts or tartlets
Biscuits
Small pies (not suited to large pies)
TIP
Save pastry trim, wrap in clingwrap and place in refrigerator for 30 minutes, roll out and cut out small biscuits, bake at 160c (fan-forced) for 8 minutes. These are delicious dipped in left over pastry cream served with fresh strawberries.
